Ricotta Cake Recipe

So the other day the store near my home had this sale on Ricotta Cheese... so I got few tabs of it and then I had no idea what to make with it...
I googled "ricotta cake" and lots of different recipes came back, the one that I am sharing, is the one that looked the easiest, fastest and the healthiest (I am trying to keep the calories to a minimum this days) since it only has 4 tablespoons of sugar.
I cooked last night and let me tell you... it was great!
So here is what you will need:
1 yellow cake mix
2lbs. ricotta cheese
3 eggs
4 tlbs. sugar
1 tsp. vanilla
1 tlb cinnamon
1tlb sugar

And this is how you'll make it:

Prepare cake as directed on box, in a large bowl mix ricotta, eggs, 4 tbls of sugar, and vanilla until nice and smooth. Grease and line with wax paper a 9x13 pan and then pour cake mix into it . Carefully pour cheese mixture on top of the cake.
Mix the remanding sugar and cinnamon and sprinkle on top (more or less maybe used ) of the cake.
Bake 350 degrees for 1 hour or until toothpick comes out clean. (it may take a bit less, depending of your oven).
Let the cake cool and then invert onto serving dish
take off wax paper

Welcome to my kitchen!

And before anything else let me tell you a little bit about myself. My name is Daniel Cervantes born and raised in Mexico but living in Toronto Canada for the last 10 years.
I absolutely love cooking! and have had this love affair with the kitchen since my early years helping my mom to cook for lots of people (our kitchen table was always fool with friends and relatives LOL).
My first influences in my cooking were all the Mexican spices and flavours, all those chillies and tortillas, salsas and sweets... but since moving to the most cosmopolitan city in the world, I started being influenced by all the different flavours from the world... I discovered the amazing taste of Asian, French, Italian and even Canadian cuisine so now my cooking is a nice combination of all of them and then a bit more.
This blog is dedicated to share all the recipes that I have found along the way in either cookbooks, the Internet, mouth-to-mouth or well kept family secrets!
I hope you enjoy taking this trip with me as much as I will enjoy sharing this with you.
